ELVIS OATS

Legend has it that one of The King’s favorite foods was a peanut butter, banana and bacon sandwich.  Here’s a way to enjoy those flavors, get in your antioxidants, and protect against heart disease at the same time.  Vivaaa Las Oatmeal.

INGREDIENTS

*PLEASE NOTE:  Peanuts and/or peanut butter MAY be contaminated with something called “aflatoxin.”  Even though this recipe calls for peanuts and peanut butter (staying true to the King’s taste), YOU CAN SUBSTITUTE ALMONDS AND ALMOND BUTTER (almonds are GREAT for cancer) and it’s just as delicious!!!

1 cup of steel cut oats or rolled oats

1 banana

1 tsp all natural peanut (or almond) butter

1-2 tbs peanuts (or almonds)

1 tsp date syrup or maple syrup

Generous sprinkle of smoked paprika

Pinch of salt

1 tsp or less of non-dairy chocolate chips

 

INSTRUCTIONS

1)  Cook (steel cut or rolled) oats to package instructions.

2)  Chop the banana and the peanuts.

3)  Cook the peanuts in a skillet over medium heat for 3-5 minutes, while adding date or maple syrup, salt, and smoked paprika and stirring until they’re coated (give it a taste when it’s cool to make sure it’s enough).  This will give us a salty, smoky, bacon-ish flavor without hurting Wilbur or promoting cancer.  Win win!

4)  When oats are cooked, stir in the nut butter and transfer to a bowl.

5)  Add the bananas and peanuts on top.  And chocolate chips?  They may not have been in his sandwich, but I feel like Elvis would approve.
